Today, Feb. 28, is Rare Disease Day, and Fairfield's Pink Cupcake Shack has created a treat to help raise awareness and funds in memory of a child of one of the store's employees.
The staff has created the cupcake "Naomi's Delight" in honor of Naomi, the daughter of employee Lorna Tyrell. Nine-year-old Naomi died from the rare Niemann-Pick disease in July.
All proceeds from the Naomi's Delight cupcake sales will go to the National Niemann-Pick Disease Foundation in Naomi's memory.
Naomi's Delight is a chocolate cupcake with ganache, mocha icing, vanilla meringue and chocolate chips -- this was Naomi's favorite cold drink, Pink Cupcake Shack owner Diane Mercado said.
Pink Cupcake Shack, located at 1215 Post Road (on the Brick Walk Promenade), is open from 10 a.m. to 5 p.m. today.
