As part of American Cheese Month we have a great event planned for this Saturday. The Cellars at Jasper Hill will be here sampling three of their great cheeses. The Cellars is a 22,000 square foot underground cheese aging facility that they've opened up to other small Vermont cheesemakers that can't afford (or aren't interested in) building and maintaining a cheese cave and setting up an operation to handle wholesale selling and distribution. Basically they provide a place for cheesemakers to send their young cheeses to be ripened and marketed by an expert staff. It is the first of its kind in the US and it really has enabled the talented cheesemakers in Vermont to start and maintain viable business. For us it means an ever increasing amount of delicious and unique cheese. We hope you can stop by and try some!
