The owners of Mecha Noodle Bar hope to bring new flavors to Fairfield.

The Asian soul food spot -- owned by the restaurateurs behind Danbury's Pho Vietnam -- has officially opened on the Brick Walk Promenade. It's a few doors down from Zane's Cycles (formerly Trek Bicycle Store).

Manager CeCe Trieu told Patch Thursday that adding new flavors to Fairfield's pizza-centric fare was a factor in deciding where to launch Mecha.

Though the noodle place only opened to the public Tuesday, several dishes already stand out as bestsellers.

The kale salad, chicken ramen, and vegetable ramen have been well received, Trieu said.

For appetizers, the pork belly bao and KFC (Korean Fried Chicken) bao "have done really well."

Bao is Chinese for pouch, Trieu explained. The dishes described similar to tacos, she added.

The drooling bao is has been Mecha's popular dessert so far. It's a duck yolk custard with bacon almondine (aka candied bacon) and hollandaise.

"It's salty and sweet, but it's a light dessert," Trieu said.

The staff at Mecha plan to sweet a grand opening event soon. Details to come.

Mecha Noodle Bar is open daily from 11:30 a.m. to 10 p.m.
