Do you love cheese?  Do you want to know more about it? Cheese 101 is the best place to start. Tuesday,  January 29th, 7-9pm : Perfect Harmony: Cheese & Beer

At Fairfield Cheese Co. we are always asked, “what pairs well with this?” It’s time we share the secret that beer is much easier to pair with cheese and meats than some wines.  From just over the  Brooklyn Bridge all the way to the far reaches of California and beyond, there is an explosion of breweries and creameries that are making beautiful music, each in their own right. With the help of the beer experts at Harry’s Wine & Liquor, this class will show you how to put them together in perfect harmony. $45.00

Tuesday, February 5th, 7-9pm: Regional Focus: Switzerland

The cheeses of the Alps are known for their toothsome textures and amazing nutty taste. They are also some of the most densely nutritious cheeses to be found because for centuries these dense, meaty cheeses sustained many a farmer through the long, tough Alpine winter. Jonathan Richardson from Columbia Cheese, which specializes in these Alpine cheeses,  will join us to taste and discuss these popular cheeses. We will also make a big pot of fondue so get ready to eat! $45.00

Tuesday, February 26th, 7-9pm: Mac & Cheese Madness

Who doesn’t love macaroni and cheese? It really is comfort food at its finest- hot, gooey and  decadent. Join us for an evening of nothing but mac & cheese. Chris will teach us the secrets of keeping it creamy and share with us a few variations sure to please everyone.  We will also wash it down with a few wine pairings of course. $45.00

Tuesday,  March 12th, 7-9pm: Cheese & Wine Round Robin with Harry’s Wine & Liquor

This class is for a game group of cheese and wine lovers who are ready to get down to some serious tasting. In this class, we will pair six cheeses with four wines and  rate the pairings on a score sheet.  Get ready for some lively discussion about what works and what doesn’t as we discuss the basics of pairing cheese with wine . $45.00

Tuesday, March 19th, 7-9pm:  An Evening of Charcuterie

It comes by a million names: charcuterie, salami, cured meat...even deli meat. Our meat offerings have grown quite a bit since we opened last year, so we’ve decided its time to delve a little deeper into the world of charcuterie. In this class we will taste through all of our new meat offerings and discuss the growing popularity of this very old world process

Forgive me, I guess I don't quite see how we are 1 million over budget? What financials are youRead More referring too? The third quarter statement of account? Was last year the year the BOE returned $ to the town? Absolutely agree with you about the middle school, we need more STEM offerings. Right now high schoolers are required to show they are proficient in Microsoft Office. Many take a semester long course to help prepare for the test (seems like that time could be better spent). Other students just take the proficiency test. Seems like this can be something that can be addressed earlier than high school. Why not offer the course to 8th graders, and let them show they are proficient in Microsoft Office before they even get to high school.

It seems apparent to me as I watch children getting picked up in the morning by school buses thatRead More there is some stream lining that could be done with the school bus budget. There are at least five separate buses that pick up children in front of my hose on Jennings road each morning 4 of which are all elementary. Can all these children in a two block radius go to different schools and if they do why. all the buses are almost empty when they pick up these children. Why then potentially are we paying all this money for buses when less can be used?

For flat, easy terrain, the beach area and old post road offer the best situations. On weekendsRead More you'll find plenty of bike riders in the area so you'll have some company and there is plenty of scenery. Also, there are a couple of multi-use off-road paths located at Ash Creek (near Fairfield Metro Station) and Pine Creek.
