Cooking Lesson: Turkey Wild Rice Soup

You’re stuffed.  You’re bloated.  Okay, you ate more than you promised yourself.  It’s understandable, we all do it.  The important thing to remember is when you fall down, brush yourself off and get back up!

I always say that it’s not about the food..except when the food counts for something healthy and good. I have a turkey soup recipe that will work wonders for curing your post-Thanksgiving guilt.  Not only does this answer the “what do I do with all this leftover turkey” question, it is the perfect soup to feel good about yourself again.  This soup is full of nutrients, it is brothy and filling without breaking the calorie bank.  You cannot beat the powerful combination of collard greens, butternut squash, shitake mushrooms and whole grain wild rice to get you back on track. This is nutritious and delicious at its best.

Now, this recipe calls for turkey stock.  If you didn’t make turkey stock at thanksgiving, no worries.  Buy store bought low-sodium chicken stock.  But trust me, turkey stock is better.  And, that answers the “what am I doing with all these turkey bones anyway? ”
