Strawberry Yogurt Bread
I must be on a baking spree becuase after I made the pumpkin bread all I wanted to do was make more bread. I decided I would change up a recipe I had made before and I came up with this.

Strawberry Yogurt Bread
Ingredients:
Vegetable oil cooking spray
1 1/2 cups whole wheat flower (white flour is fine)
1/2 cup of oats
2/3 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup nonfat plain greek yogurt
2 large eggs, lightly beaten
4 tablespoons unsalted butter, melted and slightly cooled
1 teaspoon vanilla extract
1 cup of strawberries, chopped finely (you are welcome to add more)
Directions:
1.) Heat oven to 350°. Coat a 1-lb loaf pan with cooking spray.
2.) Combine flour, 2/3 cup sugar, baking powder, baking soda and salt in a bowl. Combine yogurt, eggs, butter and vanilla in a second bowl. Fold yogurt mixture into dry mixture; stir to combine completely. Gently fold in strawberries. Scrape batter evenly into loaf pan. Bake until top is golden and springs back when you gently touch it, approx 60 minutes. *Check bread every so often.
