I’m having a love affair with tuna. It is low in calories, high in protein and portable. What’s not to love?
However, mixing tuna with gobs of mayo and slapping it between two slices of white bread is not exactly what I’m talking about.
Check out my newest creation, tuna with a little swagger!
1 Packet Tuna (low sodium)
¼ Avocado
¼ cup Red Antipasto Peppers (I like Sclafani. These are packed in water, not oil))
7 Kalamata Olives (in water)
Shallots (optional and as desired)
Drain the tuna and place in bowl. Cut into chunks the avocado and red peppers. Chop the olives and shallots finely. Mix together and serve over a bed of lettuce or with some whole grain crackers. Yum-E!
**You can also add finely chopped carrots and celery
