Tuesday, June 7th 7-9pm:  Cheese & Condiment Pairing

Have you ever wondered why cheese shops sell jams, mustard and honey? Tonight you will find out when we  create some delicious pairings and  have you thinking beyond just cheese and crackers.  $45.00 

Tuesday,  June 14th 7-9pm : Summer Cooking with Cheese

Combining the season’s bounty of fruits & vegetables with cheeses and other gourmet goodies from the shop, Chris will show us how to create delicious and easy hors d’oeuvres  and salads worthy of the season.  $45.00 

Tuesday, June 28th 7-9pm: Artisanal Cheese and American Craft Beer

At Fairfield Cheese Co. we are always asked, “what pairs well with this?” It’s time we share the secret that beer is much easier to pair with cheese than some wines.  From just over the  Brooklyn Bridge all the way to the far reaches of California and beyond, there is an explosion of breweries and creameries that are making beautiful music, each in their own right. With the help of the beer experts at Harry’s Wine & Liquor, this class will show you how to put them together in perfect harmony.  $45.00

 Tuesday, July 12th 7-9pm: Cheese 101

 Do you love cheese?  Do you want to know more about it? Cheese 101 is the best place to start. Sit and relax over a plate of some of our best cheeses (with a little wine to wash it down, of course) as Chris and Laura bare the basics. Let us guide you through a scrumptious tasting of fresh and bloomy cheeses, washed rind and aged, plus a variety of cow, sheep, and goat cheese, all while learning about cheese-making.  Leave with your new-found knowledge and order with confidence the next time you’re at a cheese counter.  $45.00

Tuesday, July 19th  7-9 pm: Cheese & Wine Matchmaking with Harry’s Wine & Liquor

This class is for a game group of cheese & wine lovers who are ready to get down to some serious tasting.  In this class,  we will pair six cheeses with four wines and  rate the pairings on a score sheet.  Get ready for some lively discussion about what works and what doesn’t as we discuss the basics of pairing cheese with wine . $50.00

 Tuesday, August 9th 7-9pm: Chris & Laura’s Excellent Vermont Cheese Weekend

We’re back from the 2011 Vermont Cheesemaker’s Festival  and  we’ve got the goods!  This class will focus on the amazing cheeses of Vermont and also Vermont’s place in the artisanal cheese movement.  Join us for an evening of tasting some of the best Vermont has to offer.  With over 100 varieties of small batch, handmade and award winning cheeses, Vermont is at the epicenter of the American artisanal cheese movement.  $45.00

Was last year the year the BOE returned $ to the town? Absolutely agree with you about the middle school, we need more STEM offerings. Right now high schoolers are required to show they are proficient in Microsoft Office. Many take a semester long course to help prepare for the test (seems like that time could be better spent). Other students just take the proficiency test. Seems like this can be something that can be addressed earlier than high school. Why not offer the course to 8th graders, and let them show they are proficient in Microsoft Office before they even get to high school.

There are at least five separate buses that pick up children in front of my hose on Jennings road each morning 4 of which are all elementary. Can all these children in a two block radius go to different schools and if they do why. all the buses are almost empty when they pick up these children. Why then potentially are we paying all this money for buses when less can be used?

On weekendsRead More you'll find plenty of bike riders in the area so you'll have some company and there is plenty of scenery. Also, there are a couple of multi-use off-road paths located at Ash Creek (near Fairfield Metro Station) and Pine Creek.
